Pasta Primevera

I've always loved good home-cooked food. Long ago, my mom told me that if I liked home-food this much, then I better learn to cook. Though I procrastinated for several years (until I moved into my own place and found a willing guinea pig ;)), of late I've started enjoying spending my evenings experimenting with new recipes.

Let me start off this blog with one of my early recipes - pasta.

Ingredients (for two servings):
  • 1 cup raw pasta
  • 1 potato
  • 1/2 cup of shelled green peas
  • 1/2 cup golden corn
  • 1 capsicum
  • 1 onion
  • 1 cup milk
  • 3 slices of cheese (you can use flavoured for more spice).
  • Butter to saute
  • salt and chilli powder to taste
Preparation:
  • Peel and chop the potato, capsicum and onion into small pieces.
  • Pressure cook the following: raw pasta, potato, green peas and corn.
  • In a wide, shallow utensil, saute the onion and capsicum for 2 mins in a little bit of butter.
  • Add the milk and cheese slices and allow the milk to boil. The cheese will melt and you'll have a yummy cheese sauce.
  • Add the boiled pasta, potato, peas and corn mixture.
  • Add salt, pepper and chilli powder according to taste.
  • Close the utensil and allow to simmer for a minute.
Viola! You have a yummy pasta primevera in the comfort of your very own home. Serve with a few slices of toasted bread / sauce as per tastes. Tastes even better with the addition of oregano and chilli flakes.


Please note: You can adjust the vegetables / cheese you use according to taste. The picture I've used is one of my early attempts - doesn't have corn in it. I came up with the above recipes after various trials.
